This exceptional coffee comes from the Granja Paraíso 92 farm , perched between 1900 and 2100 meters above sea level in the fertile Cauca region of Colombia . Carefully cultivated by renowned producer Wilton Benitez , this microlot showcases the yellow Tabi variety , a rare hybrid renowned for its aromatic complexity and natural disease resistance.
The coffee is processed using a natural process with anaerobic fermentation in the cherry , allowing the fruit's natural sugars and aromas to intensify before controlled drying at 38°C . This meticulous approach reveals a cup with a vibrant and structured profile. Available in limited quantities.
